Ingredients:

- 1 whole duck, about 5-6 pounds

- Salt and pepper

- 2 cups orange juice

- Zest of 1 orange

- 1/2 cup sugar

- 1/4 cup red wine vinegar

- 2 tablespoons butter

- 2 tablespoons cornstarch

Instructions:

1. Preheat your oven to 350°F (180°C).

2. Rinse the duck and pat it dry with paper towels. Season the duck generously with salt and pepper, both inside and out.

3. Place the duck on a roasting rack in a roasting pan. Roast in the preheated oven for 2-3 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
